Student or not there will always be temptation to order a takeaway or dive into a ready meal, but here are some simple recipes that will have you experiencing home cooking (or close enough) in no time. Here are a few of my favourite recipes that get me through my university days:
Spaghetti Bolognese (Serves 2);
You will need:
A Jar of Onion and Garlic Pasta Sauce
One medium red onion (diced)
A few mushrooms
Half a red pepper (diced)
In a large frying pan fry the oil, onion, mushrooms and peppers for 3-4 minutes. Add the mincemeat and stir occasionally until brown.
Once the meat has browned, drain out all of the fat juice and place back on the hob.
Meanwhile boil the kettle and place some spaghetti in a saucepan. Put this on the heat and boil until soft.
In the frying pan add the sauce, garlic granules and salt and stir until heated through.
Once cooked, drain the spaghetti and add the Bolognese. Finish off with some grated cheese. If you are cooking for one remember make for two and then freeze the other portion for another day.
Butternut Squash Risotto (Serves 2);
You will need:
175g risotto rice
Half a butternut squash (chopped)
Vegetable stock cubes
One medium red onion
Three rashers of bacon
In a large saucepan fry the oil, bacon and onion for 3-4 minutes.
Add the rice and stir for one minute.
Add the butternut squash and stir for a further minute.
Fill a measuring jug with a litre of boiled water and add the stock cube and leave to dissolve properly.
Once dissolved add the stock one third at a time and stir until absorbed. Repeat until all of the stock has been used. Add the thyme and serve.
Stir Fry (Serves 2)
My flatmate and I started ‘Stir fry Mondays’ – our weekly routine because Monday is our late day in uni and a stir fry is always quick!
Two chicken breasts, sliced
One pack of stir fry veg (can be found in any supermarket)
Stir fry sauce
Fry the oil in a large frying pan and add the chicken breasts. Fry until cooked through.
Add the pack of vegetables and stir for 5 minutes.
Then add the noodles and stir for another 3 minutes.
Add the sauce while you are sorting plates and cutlery out and then serve!
